I’d had a hectic few weeks and decided to enjoy the my half-day Friday of the summer relaxing. I made a treat to celebrate Friday-caramel popcorn. I used this recipe from Eating Well.
I did make some adaptations.
- I didn’t have corn syrup, so I used honey (decreased to 1/4 cup)
- Decreased the brown sugar to 1/2 cup
- Did not add the salt
- Did not use nuts this time
A note to myself buy parchment paper
. I used wax paper knowing very well it doesn’t do great in the oven and yep some of it wouldn’t come off the paper.
On another note, let’s talk a second about popcorn. It is a tasty treat full of fiber and you can keep it healthy. If you don’t have an air popper, I’d recommend getting one! They are fairly inexpensive and we’ve loved having ours. Our first one quit working after six years and Josh went out and bought another one (he made as he called in “an emergency” Wal-Mart run at midnight one night to get it-better than grabbing junk food, right?) I might do a future blog post just on popcorn with yummy (healthier) toppings, but this one is about my caramel popcorn.
Back to my caramel corn. It was very yummy even with the adaptions. It was full of flavor and was an awesome Friday treat. It can be stored and there is still plenty left…that is until Josh has an evening off and gets into it.
